Guide To Specialty Coffee Roasters

By Christa Jarvis

Roasting is the act of exposing food to direct heat. It gives a flavor reminiscent of smell of food lightly browned, charred. Roasting is used both in production of beer as coffees or cocoa. It can also be roasted almonds, hazelnuts, etc. Under the effect of a relatively high temperature, sugars and water give caramels (specialty coffee roasters).

When there is no more water, sugars and acids develop the aromas. The heat source is either gas or fuel oil, gas being preferred. Indeed, the fuel when the burner is perfectly tuned, no odor, but in any dust or any creep, he "smokes" and gives the food very unpleasant odors. Roasting shows acrylamide, a potential carcinogen man. However, a study in Brazil, Coffees by researchers failed to confirm or deny the health risks depending on how it's roasted.

Grains are roasted barley during the malting process more generally. It provides the taste malts, which give many shades of colors flavors to beers that are brewed with more malt is roasted, the more aspect will be dark, and close taste coffees or chocolate. Roasting wood (like any plant biomass) is possible, producing various volatile matter as the mass of heated decreased.

This is not the flame that will roast coffees but the heat diffuses through an oven made of refractory bricks and tiles: green coffees, comes from a hopper at top of unit. It is then introduced in a horizontal cylinder, provided with metal blades will agitate for the duration of roasting. When coffees is introduced into cylinder, the temperature is between 180 degrees C and 220 degrees C. The arrival of a mass of cold matter of fact drop to 120 degrees C.

Some of species are not produced by all the constituents of beech. It seems in particular that is produced from acetic degradation acetates acid contained in hemicelluloses. Moreover, it is a first approximation that transformation can be properly represented by law of additivity up to 250 degrees C. This is not the case at 280 degrees C and 300 degrees C, due to interactions between the cellulose and the other two constituents of wood.

Control is automatic roasting during the first 17 minutes. But from that moment on, only man can judge the perfect coffees roasting (eye-ear-nose). To do this, it has a mica window which allows him to see the cafe inside, but mainly a probe with which it removes some coffees beans, which allows him to evaluate properly.

When coffees is roasted to a turn, the driver opens the metal door of cylinder and coffees falls into a cooling tank equipped with blades, brushes and a powerful fan. After roasting, the coffees bean has changed color, taken from volume and lost 20% of its weight in moisture. This method is often used by industry for entry-level cafes, is pulsing hot air at 700 degrees C. It allows to reduce time of approximately 4 minutes to roasting.

In 1615 brought the Venetian merchants roasted coffees beans home with them. The beans were sold during the celebration of medicinal qualities. Dutch widespread coffees plants to colonies in Southeast Asia, including Java in 1699 and Ceylon, and the coffees was spread then to Caribbean and around 1718 to Brazil, the largest coffees growing nation today. The coffees is believed to have come to Denmark in 1665th
